5 Minute White Chocolate Fudge in the Microwave

The secret to this fudge's addictive nature? It's filled with crack.

Oh, just kidding! The secret is actually SCIENCE. This fudge is made in the microwave, in less than five minutes!

Believe it. The five minutes even includes prep work, if you're nimble (why not challenge yourself?)

All you need is: 

-a can of sweetened condensed milk

-a bunch of white chocolate 

Note: if you're snobby about white chocolate (a lot of foodies are, it's fine) you can use whatever 2000% cacao chocolate is in fashion right now. 

While not mandatory, these items will make it taste extra special:

-a little salt

-a little vanilla extract 

-NUTS 

I'm not going to make this a huge big blog post. I am just going to get to the goods. OK? Here's how to make fudge in the microwave in less than five minutes. 

Addictive White Chocolate Fudge in the Microwave

Makes one tray - servings depend on how hungry you are - This recipe can be halved - Printable version here

18 ounces white chocolate chips or coarsely chopped white chocolate
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1/2 cup plus 1/4 cup chopped nuts of your choice (optional) 

Line an 8" square inch pan with aluminum foil. Leave it long on two sides, so that there are little "arms" you can use later to easily lift the fudge right out of the pan. Spray the foil with non-stick spray. 

In a large measuring cup (like the jumbo one) or a microwave safe bowl, combine the chocolate and sweetened condensed milk. Put it in the nuker and microwave on HIGH for 1 1/2 minutes. Remove, and stir. Microwave on HIGH for another 1 1/2 minutes, or until the chocolate has melted. Stir vigorously to reduce any lumps. 

Stir in the vanilla and salt and stir to combine. Stir in 1/2 cup of the nuts, if using.

Spread the mixture in your prepared pan, using a spatula to smooth the top if needed. Place the pan in the fridge until completely set, about 1 hour. Slice and serve. 

Note: if you are tempted to call me a fraud because this recipe is less than five minutes plus cooling time, don't. You can still enjoy the fudge when it's hot - it's awesome on ice cream. But if you want the slicin' kind, just wait yourself a few minutes.
