Small-Batch Safe (Egg-Free) Chocolate Chip Cookie Dough

Sometimes, you want to take the time to make a beautiful homemade cake, pie, or fancy dessert.

Other times, you just want to stuff your face with chocolate chip cookie dough. This short but sweet post and recipe is intended to serve the latter desire. 

While I personally have never died from eating cookie dough containing egg, I don't want to assume that you live as dangerously as me. I value your health and safety, and therefore, I have come up with this no-egg cookie dough recipe that you can just eat as-is. 

Cookie dough that won't kill you 

Makes 6 portions (can scale up the recipe for more) 

5 tablespoons all purpose (or whole wheat, if you prefer) flour
1/8 teaspoon salt
2 tablespoons unsalted butter, softened
1/4 cup brown sugar, packed
1/4 teaspoon vanilla
1 teaspoon milk (maybe a little more, or maybe none at all)
a nice handful of chocolate morsels

In a medium bowl, sift together the flour and salt.

In another medium bowl, or the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until fluffy. Stir in the vanilla.

Add the flour mixture, and mix to combine. If the mixture is too thick, add the milk and mix until it reaches your desired consistency. You don't have to use the milk if the mixture isn't too crumbly, though. Fold in the chocolate morsels. That's it! You can separate it into little nuggets (about 6 tablespoon-sized balls) and enjoy. I like to keep them in the freezer for a snack that I can defrost on demand (it only takes like 10 minutes to soften from the freezer!).
